What is Raw Vegan or Living Food?
Raw vegan food is nature’s food – food that grows on trees, vines, or in the ground and is uncooked, such as fruits, vegetables, nuts, seeds, sprouted beans and grains. Raw food is free of animal products, organic, easy to digest, rich in enzymes, and highly nutritious. All of these delicious, natural foods are consumed whole, chopped, blended, shredded, diced and juiced to make very tasty, and even gourmet, raw food meals. If you are thinking this must be a boring way to eat, nothing could be further from the truth! There are many combinations of recipes available for the raw or living food vegan.
Why Raw Vegan Food?
Raw vegan food is LIVE food.
Whole, ripe, raw vegan, organic foods in their natural state keep us healthy, vibrant and disease-free. Why? Live food contains live enzymes, which are needed to assist the body’s digestive enzymes in breaking down food into digestive proteins. Since raw foods are not heated above 112 degrees, enzymes are not destroyed in the cooking process. These foods retain an enormously higher nutrient value than cooked foods. When food is heated over 112 degrees, enzymes are destroyed; thus, nutrients are not provided to the body.
We live longer eating raw vegan food.
During the aging process, our natural source of enzymes become depleted, so it is vital to replenish them through the best medicine – live foods. If our enzymes are not replenished, the body uses its enzyme reserves, and eventually, will run out and become set for disease. Eating cooked food causes a strain on our bodies, since it is much harder to digest. It is also stored in our bodies as toxins, which lead to all kinds of illness and disease. By eating raw, you avoid your body identifying cooked food as toxic and you replenish your life force with much needed enzymes! Dr. Edward Howell in his book Enzyme Nutrition says, “Humans eating an enzyme less diet use up a tremendous amount of their enzyme potential in lavish secretions of the pancreas and other digestive organs. The result is a shortened lifespan (65 years or less as compared with 100 or more), illness, and lower resistance to stress of all types, psychological and environmental. By eating foods with their enzymes intact and by supplementing cooked foods with enzyme capsules we can stop abnormal and pathological aging processes.”
What about acid / alkaline balance?
Most plant-based raw foods have an alkaline PH, which is ideal for optimal health. By eating a live foods diet, you will avoid an acidic body, which is the breeding ground for acute or chronic diseases.
Some common symptoms of an overly acid body are arthritis, depression, headaches, lethargy, gastritis, dulled mentality, canker sores, fatigue, muscle stiffness, stomach aches, chest pain, constipation, irritability, sinus problems, acid reflex, restless sleep and so much more. An acid body can also lead to more serious illnesses like cancer, for example. Cancer cells thrive in an acidic environment and cannot live in an alkaline state. Dr. Ted Morter explains this further:
“When your body is too acid for too long, it plays the game of life with a lineup of backup systems. These backups are either substitute minerals, or ammonia. When your body is too acid -when your normal pH is too low – the systems and organs of your body work overtime just to stay even. But systems and organs aren’t designed to function flat-out in red-alert mode all the time. They need rest just as you do. If the red – alert goes on for months or even years, systems and organs become exhausted. An exhausted body can’t compete with disease. Eventually, disease wins the game.”
A diet that is too high in acid-forming food will cause the body to become too acidic. The standard American diet full of protein flesh foods, high sugar, high fat and low complex carbohydrates is acid-forming. Eliminating meat, dairy, processed foods and adding fresh, live fruits and vegetables, seeds, nuts and sprouted grains will alter an acidic body to an alkaline state.

What about Fat?
There is a huge difference between cooked fats and raw fats. Studies conclude that cooked and saturated fats are linked to high cancer rates, heart attacks, kidney failure, high blood pressure, high cholesterol, angina, cardiovascular disease, and other diseases. These types of fats clog the arteries by becoming a barrier for nutrients to enter the cell. Raw plant fats, conversely, have exactly the opposite effect and are imperative and very healthy for the human body. Raw fats from avocados, olives, coconuts, nuts and seeds contain antioxidants and oils that help the joints, nerves and bones.
Why are these fats not detrimental to the human body?
These raw plant fats do not cause the body to gain excess weight because they still contain the enzyme lipase, which is needed to digest fat. Cooking fats destroy lipase, along with other important enzymes and minerals. Lipase breaks up the raw plant foods as they are eaten and helps to digest the oils in these foods. Because this food is getting assimilated and digested properly, it is not clogging up the blood and arteries and causing all kinds of chronic and degenerative diseases. Thus, it is not stored as excess weight in the body. You will not get fat by eating avocados, sprouted nuts and seeds and other plant fats. When starting this diet, many people eat two to three avocados per day and lose weight. Even people without a lot of weight to lose, will find that the few extra pounds they have will just melt off because they are eating fats in their whole natural form with all of their enzymes intact.
