Easy Holiday Vegan Nut Balls

The holidays can be a very stressful time for many people.  Recently, I created a simple recipe that helped ease the anxiety of trying to determine what to bring to a holiday party or potluck. These nut balls are very easy to make, and it takes only about 10 minutes. They can be served as an appetizer or a dessert. They are delicious!

Christmas Nut Balls vegan

For a raw vegan version of this recipe, soak the walnuts for 8 hours and then dry them in a dehydrator overnight.

Ingredients:

2 cups walnuts (soaked and dried for a raw vegan version)

¼ cup dates, pitted and soaked

¼ cup shredded coconut or coconut flakes

2 Tbsp. agave nectar

1 tsp. cinnamon

Process:

  1. Optional: Soak walnuts overnight (about 8 hours) for a raw vegan version. Dry in dehydrator.
  2. Grind walnuts in a food processor until fine.
  3. Add the rest of the ingredients except the coconut and blend until creamy.
  4. Form mixture into small balls.
  5. Place coconut into a large jar. Add one or two balls at a time into jar and shake until the coconut sticks to the nut balls.
  6. Refrigerate until serving.

Happy St. Patrick’s Day!

I thought I would share one of my favorite GREEN smoothies today! WARNING: this recipe is easy, healthy, filling, alcohol-free, GREEN and tasty! It is perfect as an afternoon snack to celebrate St. Patrick’s Day or as an energy-booster any time of the day!

Equipment:

heavy-duty, high-speed blender

Ingredients:

½ cup frozen pineapple

½ cup frozen cherries

1 large pear, chopped

1lb. or 2 cups spinach

¼ cup fresh cilantro (optional)

1 cup unsweetened soy milk

1 tsp fresh ginger

water (optional) 

Process:

Place the chopped pear in the blender first. Then add the frozen fruit, greens, all other ingredients and soy milk. Blend until smooth. Enjoy! (This will be thick almost like a shake. Add more water if it is too thick for you.)

Kale Nut Salad

For some of us, football and food is a fun past time, and it seems that we inevitably end up eating not-so-healthy food with more calories than we care to imagine. The answer (well, other than not watching the game – whatever game that might be – and hiking or running or exercising in its place) – is to eat something healthier, tasty, easy, low calorie, and full of nutrients. If you are going to partake in eating lots of fatty foods, sugary foods or salty foods while watching your team play during football season, this is a great recipe for an easy, green salad that will enhance your experience and add some life to your body while eating the heavier foods. Give it a shot!

Here is the recipe for Easy Kale and Nut Salad. It will serve 4-5 people:

Ingredients:

2 large bunches of lacinato or green kale (about 8-10 cups), washed and de-stemmed

2 cups soaked and chopped walnuts or pecans (or a mix of the two)

½ chopped medium onion

6-8 chopped dates

Juice from 2 small limes or lemons

2 Tbsp. olive oil

Salt and pepper to taste

Process:

  1. Rinse kale and remove the stems in the middle.
  2. Chop the kale into bite sized pieces and place in a large bowl.
  3. In a food processor, chop the nuts and then place into large bowl with the kale.
  4. Add chopped onion and chopped dates.
  5. Add lemon or lime juice and olive oil.
  6. Mix salad and then massage it for about 30 seconds
  7. Salt and pepper to taste
  8. Refrigerate for 1 hour.

Enjoy!

Oh, and, today is Jan 19, 2014, and the Broncos are playing the Patriots in the AFC Championship game. So, GO BRONCOS!!!

Grape Smoothies

For a quick, easy, nutritious, delicious and filling green smoothie, try this recipe!

Equipment:

Heavy-duty, high-speed blender

Ingredients: 

1 lb. spinach

1 cup seedless green grapes

2 pears

4 cups water

Process:

Place all ingredients in heavy-duty blender and mix until smooth.

Enjoy!

Cacao Smoothies

This is a delicious and healthy version of a chocolate shake containing no chemicals, dairy, or gluten. Children (and adults!) who love chocolate will love this one!

Equipment:

heavy-duty high-speed blender

Ingredients: 

2 Frozen bananas (cut into small pieces)

2-3 dates (soaked)

1 cup almond milk

1/2 tbl cacao powder

Process: 

1. Place all ingredients in heavy duty blender and mix until smooth.

Enjoy!

Not sure what to do with brussels sprouts? Here is a great raw recipe to entice anyone! This is very tasty and makes a great side dish for any main dish.

Equipment:

Raw Spiralizer

Ingredients:

1 head of bok choy

8-10 brussels sprouts

1 tomato

1 green onion

1 zucchini

3-4 small orange peppers

1 tbl olive oil

2 tbl tahini

2 tbl apple cider vinegar

water

Process:

To begin, chop brussels sprouts in a food processor or by hand and place in salad bowl. Add olive oil and vinegar and marinate at room temperature for 15 minutes.

While the brussels sprouts are marinating, chop the tomato, green onion, and orange peppers vegetables at desired sizes.  Then, using a spiralizer, “spaghetti” the zucchini into noodles. Add the zucchini and the rest of the chopped vegetables in the bowl with the brussels sprouts.

For the salad dressing, mix the tahini and desired amount of water in a blender or food processor. For a thicker dressing, use 1 tbl of water. For a thinner consistency, use more.  Add the dressing to the salad and mix.

Here is a refreshing, healthy and very simple raw recipe!  Children will LOVE this one!

Equipment:

High speed blender

Ingredients:

2 large frozen bananas

1/3 pineapple

1-2 dates

Dash of cinnamon

Water

Process:

Chop frozen bananas and pineapple into small pieces. In a high-speed blender, blend until smooth with dates and a tiny amount of water. Add more water for a thinner consistency. Serve as a pudding and add a dash of cinnamon.

For an alternative treat, serve as a shake!!

Here is a delicious, quick, hearty raw vegan winter smoothie for those who love papaya!

Supplies:

Basic or heavy duty blender

Ingredients:

4-5 bananas – peeled

1 -2 inches fresh ginger

4-5 dates – cut in half

1 papaya – seeded and peeled

1/2 cup coconut flakes or coconut meat

Water

Process:

Add fruit and ginger to blender. Fill half of blender mix with water.  Blend until smooth.  Add more water for a thinner consistency.

Enjoy!

(serves 2-3)
