When I first started drinking vegan green smoothies, I had no idea what I was doing. I had no clue how to make them, what ingredients I should use, how much water or plant-based milk I should add, what vegetables and fruit work well. But, I was determined to improve my health, so my research began and I soon found some good recipes.

But feeling lousy for years and suffering from uterine fibroids, chronic fatigue, anxiety, mood swings, asthma, sinusitis, foggy thinking, depression, and more, I was not sure how much of an impact a smoothie could make on my health. 1 lb. spinach

1 cup seedless green grapes

2 pears

VEG out with Vilms Raw Spaghetti

Raw Garlic/Tomato Spaghetti

Spaghetti was one of my favorite foods as a child growing up with an Italian mother, and as a result, I learned to make delicious pasta sauce! As a healthier alternative, here is a raw vegan version of spaghetti – healthy and delicious! It is best to use organic tomatoes for this because you cannot beat their natural, flavorful taste!

Equipment:

Raw Spiralizer (Wondering what a “spiralizer” is? Click here.)

Ingredients:

4 green zucchini

2 medium tomatoes, chopped

1/8 cup walnuts, chopped

1/4 cup onion, chopped

1 small carrot, chopped

1/2 red pepper, chopped

2 cloves garlic, minced

1/4 cup parsley, minced

1 T olive oil

Red pepper and salt to taste

Green olives, chopped (optional)

Process:

Use the spiralizer and make spaghetti noodles with the zucchini. Mix with all other ingredients. Add salt and pepper to taste.

Raw Brussels Sprout and Bok Choy Salad

Not sure what to do with brussels sprouts? Here is a great raw recipe to entice anyone! This is very tasty and makes a great side dish for any main dish.

Equipment:

Raw Spiralizer

Ingredients:

1 head of bok choy

8-10 brussels sprouts

1 tomato

1 green onion

1 zucchini

3-4 small orange peppers

1 tbl olive oil

2 tbl tahini

2 tbl apple cider vinegar

water

Process:

To begin, chop brussels sprouts in a food processor or by hand and place in salad bowl. Add olive oil and vinegar and marinate at room temperature for 15 minutes.

While the brussels sprouts are marinating, chop the tomato, green onion, and orange peppers vegetables at desired sizes.  Then, using a spiralizer, “spaghetti” the zucchini into noodles. Add the zucchini and the rest of the chopped vegetables in the bowl with the brussels sprouts.

For the salad dressing, mix the tahini and desired amount of water in a blender or food processor. For a thicker dressing, use 1 tbl of water. For a thinner consistency, use more.  Add the dressing to the salad and mix.

Here is a refreshing, healthy and very simple raw recipe!  Children will LOVE this one!

Equipment:

High speed blender

Ingredients:

2 large frozen bananas

1/3 pineapple

1-2 dates

Dash of cinnamon

Water

Process:

Chop frozen bananas and pineapple into small pieces. In a high-speed blender, blend until smooth with dates and a tiny amount of water. Add more water for a thinner consistency. Serve as a pudding and add a dash of cinnamon.

For an alternative treat, serve as a shake!!

Banana & Papaya Rawkin All-Fruit Smoothie

Here is a delicious, quick, hearty raw vegan winter smoothie for those who love papaya!

Supplies:

Basic or heavy duty blender

Ingredients:

4-5 bananas – peeled

1 -2 inches fresh ginger

4-5 dates – cut in half

1 papaya – seeded and peeled

1/2 cup coconut flakes or coconut meat

Water

Process:

Add fruit and ginger to blender. Fill half of blender mix with water.  Blend until smooth.  Add more water for a thinner consistency.

Enjoy!

(serves 2-3)
