Spaghetti was one of my favorite foods as a child growing up with an Italian and Spanish mother. I could not help but learn to make delicious pasta sauce!
As a healthy alternative, here is a raw vegan (uncooked) version of spaghetti – delicious and easy. This is a perfect meal for a hot summer day, and it is low calorie. I suggest using organic tomatoes (or home-grown ones) because you cannot beat their natural, flavorful taste.

4 green zucchini
2 medium tomatoes, chopped
1/8 cup walnuts, chopped
1/4 cup onion, chopped
1 small carrot, chopped
1/2 red pepper, chopped
2 cloves garlic, minced
1/4 cup parsley, minced
1 T olive oil
Red pepper and salt to taste
Green olives, chopped (optional)
Use the spiralizer and make spaghetti noodles with the zucchini. Mix with all other ingredients. Add salt and pepper to taste.
